Scones

Ingredients

  • 225g self raising flour
  • 75g butter
  • 1 tsp baking powder
  • 100ml milk or buttermilk
  • 1 egg
  • 50g caster sugar

Method

  1. Preheat the oven to 210°C
  2. Sift the flour into a bowl
  3. Rub in the butter
  4. Stir in the sugar, salt and fruit
  5. Add the egg and the milk (a little at a time)
  6. Mix until it forms a ball of dough.
  7. Place the ball of dough on to a floured surface and gently press out to form a 2cm thick circle.
  8. Divide the dough into eight pieces (like a pizza) and separate out the pieces slightly to allow for them to rise.
  9. Brush with an egg wash and sprinkle with granulated sugar.
  10. Place in the top of the oven for about 12 mins
  11. Remove from the oven and cool on a wire rack.
  12. Serve with cream & strawberries
